Taco Cleanse, Day One, Breakfast

The first taco of the Taco Cleanse! Everyone doubted that I could do it, but I did it anyways, and everyone was amazed.

Type of taco: flour!

Filling: Abundant Roasted Potatoes, from the Taco Cleanse book, made the night before.

Anything Else?: a good squirt of Sriracha

Assembly: like a fistful of potatoes on the taco, microwaved on high for 45 seconds, squirted with hot sauce.

 

Notes: The roasted potatoes, made the night before, were a little anemic. Wrong word. Limp. I was hoping for a little more crunch, or a little more color. Taste was fine, but seemed a little undercooked. 45 seconds on high is enough to make the tortilla puff like crazy, and get that frustrating "over-microwaved" edge, where it's not exactly brittle, and not exactly taffy, but somewhere between. Lack of cheese also frustrating, there's no binding agent. The taco falls apart. Needs some work.
